If you have been watching Meghan Markle’s (ok Sussex!), new Netflix series, With Love, Meghan, you may have spied her Skillet Spaghetti recipe which has taken the internet by storm with everyone weighing in on whether it is simply genius or a blight on Italian pasta heritage. Either way, it is undeniable that it is super easy to make and dare we say it, quite tasty.
This one-pan skillet spaghetti is a simple yet flavorful dish, packed with the brightness of cherry tomatoes and the freshness of greens. Cooked entirely in a single skillet, this recipe is perfect for a quick and delicious weeknight meal. No matter your feelings about Meghan, everyone loves spaghetti!

Ingredients
- 250g dried spaghetti
- 1 cup cherry tomatoes (yellow and red), halved
- 2 cloves garlic, finely sliced
- Zest of one lemon
- 3.5 cups boiling water
- 1 cup chard, chopped
- 1 cup kale, chopped
- ½ teaspoon chili flakes (adjust to taste)
- Freshly grated Parmesan, for serving
- Fresh basil leaves, for garnish
- Pinch of sea salt, to taste

Instructions
- Place a large skillet over medium heat. Add the spaghetti, halved cherry tomatoes, minced garlic, and lemon zest directly into the pan.
- Pour the boiling water into the skillet, ensuring the spaghetti is mostly submerged. Stir occasionally to prevent sticking.
- Let the pasta cook for about 8 to 10 minutes, or until it reaches an al dente texture. Most of the water should be absorbed, creating a light sauce from the tomatoes and garlic.
- Stir in the chopped chard and kale, allowing them to wilt for about 2 minutes. Sprinkle in the chili flakes for a slight kick.
- Once the greens are tender and the pasta is perfectly cooked, remove from heat.
- Plate the skillet spaghetti and top with freshly grated Parmesan, basil leaves, and a pinch of sea salt.
- Serve immediately while warm.
This dish is light yet satisfying, with the perfect balance of tangy, creamy, and savory flavors. Serve it as a standalone meal or with a side of crusty bread for extra comfort.
