Nan’s Magical Easy Bake Chocolate Cake Recipe

Ingredients:

  • 200g all-purpose flour
  • 200g granulated sugar
  • 75g unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 240ml milk
  • 100g unsalted butter, melted
  • 2 tsp vanilla extract
  • 240ml boiling water

Instructions:

  1. Preheat your oven to 175°C (350°F). Grease and line a 23cm round cake pan (or 22x22cm square pan) with parchment paper.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, melted butter, and vanilla extract. Mix until smooth and well combined.
  4. Gradually add the boiling water and stir until the batter is smooth. It will be quite thin, but that’s fine.
  5. Pour the batter into the prepared pan and spread it out evenly.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Chocolate Icing Recipe

Ingredients:

  • 200g unsalted butter, softened
  • 250g icing sugar (powdered sugar)
  • 50g unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 2-3 tbsp milk (or more, if needed)

Instructions:

  1. Beat the butter: In a large bowl, beat the softened butter with an electric mixer (or by hand if you prefer) until smooth and creamy, about 2-3 minutes.
  2. Add the dry ingredients: Sift together the icing sugar and cocoa powder to remove any lumps, then gradually add them to the butter, mixing on a low speed at first to avoid a sugar cloud.
  3. Add vanilla and milk: Once the sugar and cocoa are combined, add the vanilla extract and 2 tbsp of milk. Beat until smooth and fluffy. If the icing is too thick, add a little more milk, a teaspoon at a time, until you reach the desired consistency.
  4. Frost your cake: Once your cake has cooled, spread the butter icing generously over the top and sides. You can also use a piping bag if you want a more decorative finish!

This icing is rich and chocolatey, perfect for topping your cake! Add raspberries, strawberries or chocolate shavings for an extra wow.
